Happy Spring, friends. The weekend is almost here but it looks to be a gloomy forecast for us. When I think of dreary weather, I dream of taking a nice long nap, reading a book and eating some hearty soup. The reality is there probably won’t be a nap or book reading because we have a full schedule with the kids but this soup may possibly be included. If you want a simple and healthy meal that you can prepare and stick in the crock pot, this recipe is for you. I threw everything into my Instant Pot in the morning and by evening, we had a delicious dinner waiting for us. Here’s how to make your own.
Healthy Chicken Tortilla Soup
- 2 cups shredded rotisserie chicken
- 1 medium diced onion
- 2 cans 14.5 ounce fire roasted diced tomatoes
- 2 cans of 14.5 ounce drained black beans
- 2 cups frozen corn
- 7 cups chicken broth
- 1 tsp of garlic powder
- 2 jalapeños, finely diced (optional)
- salt and pepper to taste
- shredded cheese
- fresh cilantro
- tortilla chips
- limes for juice and garnish
Throw everything into your crock pot and cook it on low for 6-8 hours. That’s it! Garnish with cilantro, cheese, avocados and lime juice. We ate ours with grilled cheese sandwiches and tortilla chips. I know most tortilla soup recipes have actual small tortilla strips in them so you can eat it that way too. We just prefer to eat it with tortilla chips on top. Cornbread would also go well with this hearty soup.
